Ahhh.. Mam's chicken soup (with rice!). Probably my favourite food of all time. My mam usually makes this at least once a week. And if I get sick, I will also get this with a side of sunny side up! How cute! The recipe is easy, however, it takes a while to make it. It'll be worth the time :)
Ingredients (serves 4 - 6)
- 1 tablespoon of butter
- 1 onion, sliced
- 1 shallot, sliced
- 2 cloves of garlic, minced
- 2.5 litres of cold water
- 2 chicken thighs
- 2 bay leaves
- 1/4 teaspoon of grated nutmeg
- salt and pepper to taste
- 100 gr of rice vermicelli
- 1 package of soup vegetable (250 gr)
- 200 grams of knakworst (= wiener), sliced
Method
- Put the water, chicken, bay leaves and grated nutmeg in a big pan and bring to boil. Reduce the heat and let simmer.
- Melt butter in a frying pan and sauté the garlic, shallot and onion until lightly browned and aromatic.
- Put the sautéd onion mix in the simmering broth. Add salt and pepper to taste, simmer for 2 - 3 hours.
- Take out the chicken thighs, remove and shred the meat and put them back in the broth.
- Add the rice vermicelli and let cook for 3 minutes. Add vegetables and the knakworst and let cook for another 6 - 7 minutes.
- Serve as is or with warm rice.
