Ahhh.. Mam's chicken soup (with rice!). Probably my favourite food of all time. My mam usually makes this at least once a week. And if I get sick, I will also get this with a side of sunny side up! How cute! The recipe is easy, however, it takes a while to make it. It'll be worth the time :)

Ingredients (serves 4 - 6)
  • 1 tablespoon of butter
  • 1 onion, sliced
  • 1 shallot, sliced
  • 2 cloves of garlic, minced
  • 2.5 litres of cold water
  • 2 chicken thighs
  • 2 bay leaves
  • 1/4 teaspoon of grated nutmeg
  • salt and pepper to taste
  • 100 gr of rice vermicelli
  • 1 package of soup vegetable (250 gr)
  • 200 grams of knakworst (= wiener), sliced
  • Put the water, chicken, bay leaves and grated nutmeg in a big pan and bring to boil. Reduce the heat and let simmer. 
  • Melt butter in a frying pan and sauté the garlic, shallot and onion until lightly browned and aromatic. 
  • Put the sautéd onion mix in the simmering broth. Add salt and pepper to taste, simmer for 2 - 3 hours. 
  • Take out the chicken thighs, remove and shred the meat and put them back in the broth.
  • Add the rice vermicelli and let cook for 3 minutes. Add vegetables and the knakworst and let cook for another 6 - 7 minutes. 
  • Serve as is or with warm rice.
